Best-ever Hot Cocoa recipe

This recipe for hot cocoa mix is nearly as convenient as the packaged stuff, and it’s so much better! The original recipe called for nonfat dry milk powder, but I don’t like the flavor of it. Just heat the milk in a mug in the microwave, stir in 1/4 cup of the mix and you’re all set. (Remember to slurp up the melted chocolate in the bottom of the mug!) 

Best-Ever Hot Cocoa Mix

Adapted from Cooks Illustrated
Makes about 20 servings 

2 c. confectioners’ sugar
1 1/2 c. Dutch-processed cocoa powder
1 1/2 c. semisweet chocolate chips
1/4 tsp. salt

Combine ingredients in large bowl. Pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. To make hot cocoa, stir 1/4 cup of this mix into 1 cup of hot milk. Top with whipped cream or mini marshmallows.
